Here’s some of the bread I’ve made

Getting some of the best loaves I’ve ever made courtesy of @csaffitz and @nytimes. 36hours in the fridge seems to have really helped.
Back at it! While we’ve got so much time to spare it makes sense to try and perfect these beauties.

This morning’s Olive Rye Loaf, 50% Hydration
Crumb looking good. 70% Hydration. Plain & Rye.
With the weather getting colder the loaves get more time outside of the fridge. Getting good results with an overnight ferment on the counter.
Olive, Lemon, Feta, Thyme loaf. Beautiful Mediterranean flavours.
Great fun continuing the baking journey with Bagels and Pretzels at @breadaheadboroughmarket with the lovely @justingellatly today. Will be working on these!

Nicely formed ear on this raisin, cranberry, cinnamon loaf. Perfect with a large helping of butter.
